AS Ben Cox of the Star at Sancton adds the finishing touches to a rack of new season lamb, he stands back and smiles.
He knows the food in front of him is not only presented like a work of art, but is also the finest he can source for his diners.
As he sends the meal out, he is confident his customers will appreciate this from the first taste. But what they may not appreciate is that the meal before them has probably travelled less distance to the table than many of the guests.
For Ben, along with his wife Lindsey, has been at the helm of the historic East Yorkshire pub in King Street since 2003. And he has always prided himself on using local produce wherever possible.
From the free-range quail’s eggs, sourced seven miles away from Hugo House in Bielby, to the asparagus picked four miles down the road at the Balloon Tree in Shiptonthorpe, Ben has always gone the extra mile, or rather as few miles as possible, to ensure his suppliers are as close as they can be.
Ben said: “I think it is important to support local suppliers and local food tastes so much better. I tell my chefs you get out what you put in and if it is not good enough then don’t buy it; start again.
“If you are buying good products you are halfway there to a great dish.”
While local produce has become a buzzword in recent years with eateries across the country latching on to the current trend, Ben has been sourcing local produce for more than a decade. He began hunting out local suppliers while working at Tickton Grange.

Morphotek Announces Publication of Study in The Proceedings of the National Academy of Sciences on the Biological Pathway of an Oncology Therapeutic Target
EXTON, Pa. — Morphotek, Inc. today announced that a scientific paper published in the recent issue of The Proceedings of the National Academy of Sciences, sheds new light on the biological role of endosialin, also called TEM1, in promoting angiogenesis and tumor growth. Endosialin/TEM1 is a target of one of Morphotek’s therapeutic antibody programs. The article, titled “Interaction of Endosialin/TEM1 with Extra-cellular Matrix Proteins Mediates Adhesion and Cell Migration,” reports on a study performed by Morphotek researchers about the role of endosialin/TEM1 in neovascular biology.
Experimental data showed that endosialin/TEM1, which has been previously shown to be expressed on cells of neovessels in tumors, can elicit cell binding to extracellular matrix proteins (ECPs) via direct interaction. In addition, the ectopic expression of the protein in endosialin/TEM1-negative cells also mediated cell-cell contact via altered cellular morphology and promoted migration of cells exposed to chemotactic stimuli, both classical characteristics of angiogenesis pathways.
“During the study, we found that the humanized monoclonal antibody MORAb-004 was able to specifically bind to a region of endosialin/TEM1 and inhibit endosialin/TEM1-ECP interactions that in turn resulted in suppressed cell migration to chemotactic factors,” said Luigi Grasso, Ph.D., Senior Vice President of Research and Development for Morphotek. “This data provides insight into a molecular mechanism by which endosialin/TEM1 supports neovascularization and supports the underlying principle of using MORAb-004 to block disease-associated angiogenesis.”
Endosialin/TEM1 was originally discovered by Drs. Lloyd Old, Pilar Garin-Chesa, and Wolfgang Rettig at the Ludwig Institute for Cancer Research using molecular immunology approaches to identify cell surface target proteins expressed by tumor stromal cells as a means to suppress/regress tumor growth. Endosialin/TEM1 expression has been found to be highly associated with neovascular disease, including a variety of different cancer types. In vivo studies using knockout mice have shown that deletion endosialin/TEM1 results in suppressed neovascularization, growth and metastasis of tumors in xenograft models as compared to wild type controls. Unlike the VEGF pathway, blockade of endosialin/TEM1 pathway did not lead to physiological changes in normal tissues, development or wound healing.

World-class centre set to improve healthcare

A NEW innovation centre is opening in Swansea to help take healthcare into the 21st Century and beyond.
The centre, which has received Pounds 446,002 funding from the Welsh Assembly Government, will help companies developing the latest technologies to improve healthcare in Wales, ranging from remote monitoring of patients to accessing medical records from a mobile.
It could help the elderly remain in their own homes rather than move into care homes, and enable people to manage conditions like diabetes.
Called the E-Health Industries Innovation (EHi2) Centre for Wales, it will be based at Swansea University’s Medical School.
Companies using it will be provided with a range of support to develop, test and validate new products and services to satisfy the demands of the NHS and patients. It is the first centre in the UK to offer this level of support.
Lesley Griffiths, Deputy Minister for Science, Innovation and Skills, said: “Our investment in this centre will support businesses across Wales to target what is a rapidly expanding global market.
“We have a raft of expertise and world-class facilities in our universities and colleges, and it is vital they work in partnership with industry to ensure companies are in a position to maximise every business opportunity as it arises.”
David Ford, director at Swansea University’s School of Medicine said: “E-Health is a multi- billion pound, high-growth, high- technology global market, with massive opportunities for companies that have welldesigned and evaluated products.”
